Behavioral and work-related factors influencing the nutritional status of fast-food employees

Abstract

OBJECTIVE: to analyze the behavioral and work-related factors influencing the nutritional status of employees in a fast-food chain in Guatemala. METHOD: a mixed, correlational, and cross-sectional study was conducted with 160 employees selected through cluster random sampling (16 branches, 10 employees each). Data was collected through interviews and questionnaires (two instruments each) and anthropometric measurements (weight, height, abdominal circumference) to assess nutritional status and cardiovascular risk. RESULTS: overweight and obesity were predominant in both sexes, with higher cardiovascular risk among those with excess weight. A significant relationship was found between body mass index and physical activity, dietary diversity, and other factors. Additionally, a significant relationship was observed between cardiovascular risk and dietary diversity. The discrepancy between eating habits at home and at work may explain the detected nutritional status and cardiovascular risk. The need for work environments that promote healthy eating is emphasized. CONCLUSION: dietary conditions, physical activity, dietary diversity, salary, and working conditions are determining factors that influence eating behavior and, consequently, affect body mass index, while dietary diversity is the main factor associated with cardiovascular risk.

Jennifer Jhoana Mayen Mejía, Universidad de San Carlos de Guatemala

She holds a Master's degree in Food and Nutritional Security, a Master's degree in Higher Education with an emphasis on Innovative Technologies, and a Master's degree in Industrial and Service Business Administration from the University of San Carlos of Guatemala. She has conducted research in the field of education, with a publication in the Faculty of Humanities (2022). She has worked as a Clinical Nutritionist since 2019.
